For legal reasons they can never put the actual distillery name of this whisky on the label. They use the name Blairfindy because this is the name of the farm that the owning family, the Grants, came from. They are historically referred to as the “Blairfindy Grants.”\u003c\/p\u003e\n\u003cp\u003eGlenfarclas isn’t too keen on independent bottlers using their name, so the bottlers find creative ways at suggesting the contents of a particular bottling without upsetting the Grant family.\u003c\/p\u003e\n\u003cp\u003eGlenfarclas means \"The Valley of the Green Grass\" in Gaelic, and the skilled Scots obtain the water used in the distillation from a small spring that rises from the beautiful and dramatic Ben Rinnes. The distillery is located at the foot of the heather-covered mountain, where the water spurts out from the underlying granite when the winter snow melts. The combination of the very pure, soft water and the unique shape of the pot stills that Glenfarclas uses contributes to the distillery's unique Highland Single Malts .\u003c\/p\u003e\n\u003cp\u003eGlenfarclas Distillery has been family-owned since 1865, and it is the Grant family who have established the Scotch whisky distillery as one of the best in the world. Glenfarclas is one of the few remaining Scottish distilleries that are still family-owned. Since 1865, the distillery has been in the hands of the same family: The Grants. John Grant was actually a cattle farmer when he bought Recherlich Farm and Glenfarclas Distillery in 1865 for £511. It is six generations of whisky knowledge that benefits us consumers today. This continuity has made it possible for Glenfarclas to still use older ways of making whisky. Not because of romance and a longing for history. Glenfarclas is a success, and rightly so.\u003c\/p\u003e\n\u003cp\u003eAs George Grant, the sixth generation of the family, puts it: \"We've lived through 22 recessions. We make the whisky we can afford to make and never borrow money to make it.\" During the 1980s, when the whisky industry itself was cutting back on production, Glenfarclas's was on the rise. Glenfarclas has larger volumes in stock than most distilleries. A reluctance to independent bottlers using the distillery's name on their (rare) offerings has also helped maintain a strong identity for the Glenfarclas brand itself. Glenfarclas also insists on maturing its whiskies in ex- sherry casks . This helps the whisky achieve greater body, complexity and sweetness. It's no small operation, and today they have 80,000 casks for ageing. Since 1989 they have come from Spain, specifically Huelva near Jerez - and they do so almost every month.\u003c\/p\u003e\n\u003ch3\u003eAbout Blackadder\u003c\/h3\u003e\n\u003cp\u003e\u003cspan\u003eBlackadder’s philosophy is very simple – they believe that the Cask is King. Sixty to seventy percent of the flavors in a whisky are taken up slowly from the cask as the spirit lies maturing in the warehouse. The action of changing temperature draws the spirit in and out of the cask. \u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eA family operation started and piloted by whisky legend Robin Tucek, they sell to a few limited countries around the world, primarily Tiawan, Japan, the USA and Sweden.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eBlackadder was established in 1995 by Robin Tucek who runs the family business with his daughter Hannah and son Michael. Blackadder International gets its name from fugitive 17th-century preacher, John Blackadder. Each of the three owner-operators brings something unique to the table. Michael Tucek used to be a chef. He uses his familiarity with a wide range of aromas and flavours to write all tasting notes. Michael feels that “our sense of smell is the most direct sense to our brain and also our most complex. It’s proven that once you go over three aroma compounds mixed together, everything is subjective and becomes very personal. Every aroma can evoke a different memory in each of us and we build up our aroma library as we grow. By not being afraid to say what we sense and share it, we can all learn something from each other.” Like Michael, Hannah grew up around whisky and has come to appreciate whisky at its pure state. Her father and brother joke that she is the one that’s really in charge.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eEvery cask is unique, with its own fingerprint. This is why they bottle most of their whiskies from single casks. They don’t believe in chilling or otherwise heavily filtering their whiskies, and they never, repeat never, add caramel colouring or flavouring to their spirits. They have always believed the personalities of their whiskies are colourful enough.
