Feast your eyes on the inaugural release from Bonnington Distillery! This Lowland single malt from Halewood’s Leith-based distillery was aged in a single Ruby Port cask and then filled into 500 bottles at 52.3% ABV. All of them are hand-signed by the distiller, Jamie Lockhart.
John Crabbie & Co traces its roots back to 1801 when Miller Crabbie established himself as a merchant in Edinburgh. Under the guidance of his son, John, the company became a force in the whisky blending business, operating the Haddington grain distillery int he mid-19th century. John Crabbie was intrumental in the building of the North British distillery in Edinburgh, and acted as it first chairman. Like so many others, John Crabbie & Co eventually became part of DCL, in 1963, before passing to Macdonald & Muir, under whom its whisky portfolio became dormant. In 2007, Halewood International purchased the brand, and ten years later revived its interest in whisky. In the same year, the acquired land near the original John Crabbie offices, and construction of the Bonnington distillery commenced. Works were completed in December 2019, and production of its new Edinburgh single malt began. The distillery operated bespoke Ogee stills from Speyside Copper Works, and has a capacity of 500,000 litres per year.
Expect aromas of sweet dessert wine, dried fruits, rich oak and subtle citrus, which lead onto a palate full of sweet malt, poached pears, creamy berries, caramel and candied ginger. A long, sweet finish carries hints of gentle spice from the cask.
