Glenallachie 12 Year Oloroso & PX Sherry Cask Finish is a whiskey that has been aged for 12 years, with 75% of the whiskey aged in Oloroso sherry casks and 25% of the whiskey aged in PX sherry casks, aged for about 5 years in bourbon
casks. It is a Japanese market exclusive product that is bottled at cask strength using only casks selected by Billy Walker, with a total production of 3,654 bottles. The whiskey is aged in sherry casks after extracting the flavours from the bourbon casks, resulting in a whiskey with a more complex flavour.
The colour is glossy mahogany. When poured into a glass, the concentrated sweet aroma of sultanas is mixed with cinnamon and cloves, followed by candied cherries, beeswax, and plum syrup. When you put it in your mouth, the mellow sweetness of dates, semi-dried figs, dried apricots, and chocolate cake spreads, along with the warmth of ginger sugar and the bitterness of dark chocolate. The pleasant sweetness lingers on for a long time, and the aroma of mocha and marzipan tickles your nose.
