The new cask finish series for GlenAllachie. The Amontillado cask finish seems to be rising quite quickly in popularity over its woody orange but subtle impact on malted barley based whisky and proving to be quite a hit with Springbank and other brands too.

Beginning its life as a Fino, Amontillado Sherry undergoes an additional maturation period without a ‘flor’ layer. This stage of oxidative ageing develops a richer colour and more robust characteristics.

Using hogsheads that previously held this well-aged style of Sherry, the subsequent single malt brims with dark cherries, toasted hazelnuts and caramel sauce.

TASTING NOTES

Colour: Bronzed Mahogany.

Nose: Soft orchard fruits, cinnamon and heather honey, with butterscotch, hazelnuts and dark tobacco.

Taste: Honeycomb, maraschino cherries and dried apricots, followed by poached pears, blood orange, mixed nuts and cinnamon.
