One of the hottest climate whiskies which means hyper aging on the whisky. This effect is so pronounced that the ABV goes down and then back up after more water evaporation occurs. For a whisky that is young it is truly spectacular stuff.
The Milk and Honey Distillery, situated in Tel Aviv, is the country's first whisky distillery. It was founded in 2014 and is renowned for its creative approach to whisky production, which makes use of the distinct climate of the nation to accelerate the maturation of whisky. They create a variety of single malt whiskies, many of which have flavours reminiscent of fruit and the Mediterranean. The distillery's innovative spirit and dedication to producing high-quality Israeli whisky have brought it recognition in the world whisky scene.
This specific release really shows off the affect of their climate has on the whisky as its aged at the Dead Sea, 423 metres below sea level, which is the lowest point on Earth where temps go as high as 50°C.
TASTING NOTES
Nose: Sweet with French vanilla and mocha, notes of cigar box and a refreshing hint of spearmint, pleasant oakiness in the background.
Palate: A gentle beginning with black tea leaves followed by a powerful wave of warm spices such as cinnamon and coriander seeds, dark cocoa powder and a pinch of crushed white pepper.
Finish: Long and satisfying with candied ginger and cloves, joined by a bouquet of toasted herbs and coarse sea salt.
