This bottle contains Pedro Ximenez Sherry drawn from refill Hogshead casks that previously held whisky. A bit of a backwards way to think about this process but the result is outstanding especially if you have a sweet tooth.

Sometime it is nice to try something that is not whisky, and especially something that is with Pedro Ximenez influence!

North Star Spirits are an independent bottler of fine whiskies, rums and bourbons. Founded by Ian Croucher in 2016, the Glasgow based company produces small batch releases without chill filtration and usually at a healthy cask strength.

They are also currently building a new distillery in the heart of Campbeltown called Dal Riata.

NOSE: JAI CHOHAN’S RASPBERRY JAM ALL OVER YOUR TOAST

PALATE: RAISINS, BLACK COFFEE AND CANDIED FRUITS

FINISH: CLEAN PALATE, INCREDIBLE TEXTURE, BRIGHT AND FRESH
