Bottled in a Pedro Ximenez Quarter Cask which means HUGE flavour profile from the sherry as it is a smaller barrel so here we have good whisky, in a great barrel, at high strength. There is nothing more that we could want more than more age but then we will of course pay a lot more for it.

In 2015, Bill Dobbie and Alasdair Day identified the Isle of Raasay as an ideal location for whisky making, and they quickly set about converting the island’s nineteenth-century Borodale House into a state-of-the-art distillery. Selfridges has hand selected a Quarter Cask Pedro Ximenez as part of an exclusive 166-bottle collaboration. Bottled at Cask Strength, this peated single malt has flavours of savoury spice, sweet dark fruits, raisins, dried figs, and a hint of saltiness.
