The right cask is crucial, as is the right combination and the right timing: which distillate goes into which cask and when is a question that determines the quality of the final product. Whether ex-bourbon, PX sherry, Pinot Noir, American, or French oak – each cask has its own individual character and a history, the facets of which it imparts to our distillates. The composition of these qualities is an art for which we dedicate considerable time, care, and skill.
It begins with the purchase of the barrels, which we buy worldwide and bring back to the farm, continues with the selection of the distillates that mature in them, and ends with the final bottling – a process that extends over many years and at the end of which there is a distillate that we are proud of.
Three unique whisky lines: a classic single malt, a robust single rye whisky matured in sherry casks, and a single malt peat. In addition, exceptional and exciting selections are regularly released. Rare, precious, and truly unique.
Over 800 carefully selected casks are currently maturing various vintages in the BIRKENHOF warehouse. The spirit is distilled from a wort brewed according to the distillery's specifications, as well as from malted or rye grist. Fading Hill is a liquid essence of nature, of the land, and thus also a part of the people who embody the art of distillation at the BIRKENHOF DISTILLERY.
