This exceptional single cask release has been fully matured in an EX-RYE CASK and raises a toast to Victoria Station.

Victoria Station was opened on 1st October 1860, swiftly becoming a tourist gateway to the seaside resorts on England’s South Coast. The Victoria Underground line was constructed over 100 years later – finally connecting to Victoria itself in 1969 when the completed line was officially opened by Queen Elizabeth II on the 7th March. The area is close to many of London’s most popular tourist attractions including Buckingham Palace and both the Apollo and Victoria Palace theatres.

TASTING NOTES

NOSE: Spiced malt loaf and pickles are joined by split vanilla pods, crunchy toffee and confectioner’s custard.

PALATE: Sliced green apple and dried mango slices alongside vanilla cream and cashew nuts. A backbone of spiced oak together with cracked black pepper, all spice and star anise.

FINISH: Dry earthy spicing with toffee and fading tropical fruits.

About Bimber

The founders of London's Bimber distillery, Dariusz and Ewelina, moved from Poland to the UK in 2003, opening their distillery in the Park Royal area of west London twelve years later. Plazewski inherited his passion for whisky from his grandfather, who also distilled his own spirits. The company’s first casks were laid down on the 26th May 2016, and three years later they released their first single malt in September 2019. This became the first whisky to be distilled and bottled in London for over a century. The distillery carries a “farm-to-bottle” approach by sourcing 100% of its barley from a single producer and using traditional floor maltings and slow fermentation techniques. Distillation takes place via a 1,000-litre wash still and a 600-litre spirit still that were both crafted by Hoga of Spain.
