Penelope Bourbon was created in 2018 by lifelong friends Mike Paladini and Danny Polise, named in honor of Paladini’s daughter, Penelope. The brand was developed with a spirit of experimentation, allowing the founders to innovate outside traditional distilling norms. In 2023, Luxco, Inc., a subsidiary of MGP Ingredients, acquired Penelope Bourbon, while the original founders continue to manage the brand.
Penelope Bourbon is distilled primarily at MGP’s Ross & Squibb Distillery in Lawrenceburg, Indiana, with some partnerships in Kentucky. The brand uses four-grain mash bills, typically including corn, rye, wheat, and malted barley, which vary slightly depending on the release. ging occurs in new charred American oak barrels, with char levels ranging from #1 to #5 and optional toasted finishes for certain releases. Bottling is non-chill filtered, and proof levels vary from 80 proof (40% ABV) to barrel strength releases of 112–116 proof (56–58% ABV)

In 2018, Mike Paladini and his wife, Kerry, found out they were expecting a baby girl, Penelope.
