At Project X, we’re rewriting the rules of bourbon blending, guided by Penelope’s Master Blender, Danny Polise, whose creativity and craftsmanship shape every batch. Here, we explore the boundaries of bourbon with bold, experimental blends designed from the ground up for unique cask finishes. Each blend isn’t just complemented by the cask; it’s crafted specifically to harmonize with it, resulting in a bourbon like nothing you’ve experienced before.
Penelope Project X is a study in finishing, featuring Oloroso Sherry, Cognac, PX Sherry, and an Oloroso/Cognac double finish. Penelope Bourbon Co-Founder, VP of Product, and Master Blender Danny Polise coordinated this wide range of finishes across a set of finishing barrels, utilizing the company’s four grain blend as the base bourbon.
TASTING NOTES
The aroma is a cohesive blend of dried apricot and raspberry, with subtle notes of aged leather. Raspberry makes a soft landing on the palate, setting the base for additional flavors of black cherry, brown sugar, and stone fruits. Hints of tobacco and leather give way to more dried fruits in the finish, with cherry and raspberry being most prominent. A delicate white pepper spice lingers as the flavours trail off.

Penelope Bourbon is a modern, premium American whiskey known for its four-grain mash bills, innovative cask finishes, and approachable, full-flavored profile.
Penelope Bourbon was created in 2018 by lifelong friends Mike Paladini and Danny Polise, named in honor of Paladini’s daughter, Penelope. The brand was developed with a spirit of experimentation, allowing the founders to innovate outside traditional distilling norms. In 2023, Luxco, Inc., a subsidiary of MGP Ingredients, acquired Penelope Bourbon, while the original founders continue to manage the brand.
Penelope Bourbon is distilled primarily at MGP’s Ross & Squibb Distillery in Lawrenceburg, Indiana, with some partnerships in Kentucky. The brand uses four-grain mash bills, typically including corn, rye, wheat, and malted barley, which vary slightly depending on the release. ging occurs in new charred American oak barrels, with char levels ranging from #1 to #5 and optional toasted finishes for certain releases. Bottling is non-chill filtered, and proof levels vary from 80 proof (40% ABV) to barrel strength releases of 112–116 proof (56–58% ABV)
Penelope Bourbon is celebrated for its approachable, full-flavored taste. The Four Grain Bourbon features tropical fruit notes like apricot, peach, and mango, complemented by vanilla, caramel, and oak, with a soft mouthfeel and subtle floral undertones. The Toasted and Barrel Strength releases provide more robust, layered flavours, balancing sweetness, spice, and oak complexity. Overall, the brand emphasizes smooth, rounded, and slightly juicy flavours, making it suitable for sipping neat or in cocktails.
Penelope Bourbon was crafted and created in a classic American tradition – to celebrate an impending birth of a child. In 2018, Mike Paladini and his wife, Kerry, found out they were expecting a baby girl, Penelope. To commemorate this occasion, Mike quickly realized he wanted to create a spirit that embodied the daily joy of celebrating life’s pleasures – big and small.
