The Brauerei Locher AG, acquired by the Locher family in 1886, is now the only brewery in the Appenzellerland. An independent family business, it is now in its fifth generation and is renowned around the world for its speciality beers.
Since 1999, the Locher brewery has been producing Appenzeller Säntis Malt. The starting point for this award-winning spirit was ancient wooden casks found in the family brewery's cellars. These casks hold the history of 130 years of beer production. Our whiskies, matured in these old casks, are thus an extract from all five Locher generations.
This applies to our Säntis Malt as well as to the spring water from the Alpstein mountains. It takes years for the water to seep through the bedrock. And it has been more than 130 years since the Locher family began brewing beer at the foot of the Alpstein and aging it in oak barrels. These same barrels, together with the spring water, now form the basis for the multi-award-winning Appenzeller Säntis Malt. The finishing touches are applied in wooden casks from around the world, casks that previously held port, sherry, bourbon, sweet wine, Pinot noir, rum, and other specialties. These casks are responsible for the final character of each Säntis Malt edition.
